Instructions: Simmer the zucchini whole in about 1/2 c salted water until very tender, about 10 minutes. Combine the zucchini & oil & mash into a smooth consistency. Top with the nuts. VARIATION: When zucchini is tender, drain & slice it, gently stir in the oil & top with nuts.
