THE CUBED NOODLE ----------------
4 x Eggs
4 tbl Semolina flour
6 tbl Freshly grated Parmesan cheese
3 tbl Butter melted
----------------- BUTTER AND OIL FOR FRYING ----------------
1 tbl Butter
2 tbl Olive oil
----------------- THE SOUP ----------------
6 cup Basic Chicken Stock see * Note
The Cubed Noodles
Freshly-grated Parmesan cheese
Salt to taste
Freshly-ground black pepper to taste
Instructions:
Instructions: Mix all ingredients for the cubed noodle together. Heat a large frying pan and add the additional butter and olive oil. Fry the mixture very lightly on both sides. It should not be discolored. Allow to cool and cut into tiny cubes.

When ready to serve, heat the stock to a simmer. Add the cubed noodles, a bit of cheese to taste, salt and pepper, and garnish with the parsley.

Serve very hot and enjoy a very Old-World food product.

Comments: Some dishes are just simply fun to cook. This is such a dish.

It was given to me by my friend Mrs. Nasi in Bologna, Italy. The pasta shops there sell this "cubed noodle" ready to go ... but I think you can do better on your own.

It is very simple and provides a most hearty meal.
