Ingredients:

2 tbl olive oil
1 sm onion chopped
3 x celery ribs diced
1 x garlic clove minced
1 x carrot peeled and sliced
4 cup canned tomatoes
4 cup water (or 3 cups water and 1 cup white wine)
1 x green pepper diced
1 tsp salt
1/2 tsp freshly-ground black pepper
1/2 tsp sugar
1 x bay leaf
1/2 tsp minced fresh rosemary

Shrimp
Scallops
Lobster
Flaked white fish
Instructions:
Instructions: In a small pot, heat olive oil. Add onions and garlic and saute until onions are clear. Add all remaining ingredients except seafood. Bring to a boil, reduce heat, cover and cook 30 to 45 minutes until vegetables are tender but not mushy. Check for seasonings, correct if necessary.

When ready to serve, add seafood of your choice and heat throughout. May be enriched with a small amount of butter and garnished with grated Parmesan cheese.

This recipe yields 6 servings.
